Echoing what others have said. If you're opted into a beta channel, you'll only get updates for that beta channel. By opting out of all betas, you're back on the main branch and the client should update to 1. It's the same procedure when public prereleases are made available.

In your library, right click KSP. Click the "Verify Integrity" button. It will check your currently installed program against what you have selected as your default.
If you really do have the betas stuff turned off, then your default is the current version of the program. It will redownload all the files that do not match the current default.
